Caramel

This average-sized shrub grows up to 4 feet (1.2 meters) tall and lives for around 30 years. It is susceptible to disease and destructive insect infestation.

It has many branched, crooked stems covered in cracked, light brown bark, and the wood inside is copper-coloured.

The branches are very short and thick with dozens of twigs that and are covered with thick bunches of small, thin, leaves with jagged edges. The leaves themselves are solid caramel or slate, with cream lines, rigid and covered in fine hairs.

In mid-summer it produces many large, bold yellow blossoms with stiff, pointed petals with a bell-shaped floral cup. They fall easily and have an intense scent that smells like an ocean breeze.

In early winter small long, straight fruits ripen. The rough dark brown skin is thick and sweet and spicy, and the crunchy bold yellow flesh is sweet and savoury and juicy. The hazel seeds are small and are located in the centre of the fruit.
